She and Spike are in the middle of something that might be really good, something that had been a long time coming, but also something that feels very far away right now. (She thinks it's called abducted when you're an adult and usually done by aliens, which is a possibility here) Buffy is a little more accustomed to the place, a little more settled and (if it weren't for everything else) a little more prepared for thinking a hot guy is hot. However, she's on board with the getting the specialness of everyone that has specialness back. It would make this place easier to deal with and possibly easier to take over. So they're agreed: this is just an act and neither of them will be thinking about anything more than playacting for the camera. Good thing they've got that settled.
His compliment flusters her because it's so very much something someone with special senses would pick out and, therefore, so very familiar.
